Upside Down Layered Stir Fry Recipe

Shop, Collect and Get MasterChef Knives with Pick ‘n Pay Hyper

To give you a bit of background with how this recipe came about (click here you want to go straight to the recipe): Pick ‘n Pay asked me to try their MasterChef knife range, which you can currently get for free at Pick ‘n Pay Hyper through their shop, collect and get promotion. So I wanted to make a recipe using the knives, and try them for what they’re for! The MasterChef knives are high-quality and have a sleek, matte black professional finish. The blade is non-stick coated and the hollow ground blade edge makes slicing easier. As if that’s not enough, the weighted handle improves your balance when chopping and the ergonomic handle provides non-slip grip.

I made a Grapefruit and Sweet Piquanté Pepper Salsa with a Rump Steak last time. This time, I felt like something a bit different. I read about a layered stir fry and decided to make a version of my own.

How does the Pick ‘n Pay Hyper MasterChef Knife Collection promotion work?

If you want to get your own MasterChef knives, simply shop at Pick ‘n Pay Hypermarket and collect the stickers every time you shop. Soon you'll have enough to get a free knife. You receive one sticker for every R100 you spend. When you have collected 60, 80 or 90 stickers, you qualify for one of the knives.

I love a good stir fry, as it’s a great way to add many different vegetables to your dish. For this recipe, I decided to try something I’d never done before and make an ‘upside down stir fry’. This basically means that you assemble your dish in reverse in a bowl, and then place a flat plate upside down on top before gently turning your dish the right way around. Find the recipe below and try make yours at home!

Ingredients for the Upside Down Layered Stir Fry

  • 1 cup Sushi Rice 

  • 500 gram Let’s Cook Braai Bacon (with Savoury, Rosemary and Zesty Lemon Sprinkle)

  • 200 grams Rainbow Baby Carrots 

  • Pack of 2 Baby Red Cabbages 

  • 150 grams Exotic Shimeji Mushrooms 

  • 60 grams Let’s Cook Crushed Garlic, Ginger & Chilli

  • 250 ml Soy, Ginger & Stir fry Sauce

  • 4 Eggs 

  • Some French Chives for garnishing

How to Make the Upside Down Layered Stir Fry

  1. Cook your sushi rice according to the packet. 

  2. Slice the braai bacon in pieces and pan fry with a little bit of olive oil in 15 mins.
    You can of course also braai the bacon and slice it after, but I panfried the pieces for this recipe.

  3. Use scissors to cut the end of the mushroom stems and fry the mushrooms in a bit of oil in a pan. 

  4. Slice the baby red cabbages and peel and slice the rainbow carrots in half. Fry them in different pans to be able to layer your dish before serving. 

  5. Add the Shimeji Mushrooms to the braai bacon.

  6. Add the Crushed Garlic, Ginger & Chilli to the mushroom and bacon mix and immediately drop the heat.

  7. Add the Soy, Ginger & Stir fry Sauce next.

  8. Meanwhile, fry four eggs in a separate pan. 

Assembling the Upside Down Layered Stir Fry

  1. Once all your components are stir fried to perfection, it is time to assemble your dish:
    Slowly add the fried eggs upside down into a large serving bowl. Add the different layers in the following order:

    • The sauce/meat/mushroom mix

    • The carrots

    • The cabbage

    • The rice 

2. Smooth the rice out and compress it gently. 

3. Place a flat plate upside down on top of the bowl and gently turn upside down. 

4. Jiggle and tap the bowl a little bit, to make sure the components have loosened off the edges of the bowl, then remove the bowl and voilà, your Upside Down Layered Stir Fry is ready!

But when Shawn gets selected to be one of the 20 contestants participating in the fourth season of MasterChef South Africa, he decides to go all in. Leaving his 7-month-pregnant wife to look after their then three and one-year-old children, he battles it out and comes back home five weeks later with the trophy and a million rand prize money in his pocket.

It all started with an Instagram account, but The Roasted Dad is so much more now. Shawn has stayed his entrepreneurial self and whilst he hosts Private Dinner Parties and Cook-with-Me Demos, does Restaurant Take-Overs, he still runs the lighting company and several other businesses.

On his blog, Shawn shares Restaurant Reviews and Accommodation Reviews, and gives an insight into the wild and wonderful life he leads together with his wife Lianne, and their three children Aiden (6), Olivia (4) and Harvey (2).
