Watermelon, Feta and Mint Salad
A great summer recipe and in Christmas colours!
“Awter mewons!” is what my two year old shouts through the shopping aisle when he spots one of these bad boys. And his excitement is for good reason. Delicious when simply cut in slices and eaten off the skin, there is so much more you can do with watermelon.
I love to make this watermelon, feta and mint salad, and for events a watermelon sorbet is a great palate cleanser.
I’ve even grilled watermelon on my Everdure Furnace™ and can tell you that grilled watermelon pairs amazingly with some lime, honey and coriander.
What else? You can freeze little blocks of watermelon and put them in your cocktail.
And if you are really looking for a boozy snack or drink, have you tried soaking watermelon slices with all the ingredients of a margarita (tequila, triple sec, lime juice)? This makes the perfect braai accompaniment and can be classed as a drink and snack, and pre-prepared and frozen.

Ingredients to make a Watermelon Salad
1/2 watermelon
3 disks of feta
20 g fresh mint
A handful of nuts (walnuts, pecan nuts) or seeds (pumpkin seeds, sunflower seeds)
You can create different versions of this salad, and it will taste slightly different yet equally delicious each time!
How to make a Watermelon Salad
Cut the watermelon into slices, then remove the peel.
It is best to remove the seeds from the slices. This is a time-consuming process, but makes it so much more enjoyable to eat the salad!
Cut the slices into equally sized cubes.
Cut the disks of feta into equally sized cubes, that are about a quarter of the size of the watermelon cubes.
Add the watermelon and feta cubes to a large salad bowl.
Take the mint leaves off and sprinkle over the salad.
Lastly, add the nuts or seeds for some crunch!

Leaving his 7-month-pregnant wife to look after their then three and one-year-old children, he battles it out and comes back home five weeks later with the trophy and a million rand prize money in his pocket.
It all started with an Instagram account, but The Roasted Dad is so much more now. Shawn has stayed his entrepreneurial self and whilst he hosts Private Dinner Parties and Cook-with-Me Demos, does Restaurant Take-Overs, he still runs the lighting company and several other businesses.
